Vinification: The harvest takes place manually in the coolest hours of the day. After destemming and a prolonged cold maceration on the skins, the soft and progressive pressing of the grapes is carried out. A slow thermo-controlled alcoholic fermentation follows.
Refinement: The wine is aged in steel preserving the peculiarities of the grapes unaltered before being bottled.
