Winemaking
Manual harvest and selection of grapes. Delicate pressing and racking for natural sedimentation. Slow fermentation at controlled temperature in stainless steel tanks. Aging for 7-8 months on fine yeasts partly in stainless steel barrels (80%) and partly in large wooden barrels (20%).
