Age of the vineyard – Thirty years Exposure – South, Altitude and Soil – marly limestone, 200/220 m. above sea level;
Winmaking, Maturation, Aging – Harvest at different times for the individual vines in the early hours of the morning with sorting in the vineyard. Brief contact with the skins, after cleaning, the must obtained from soft pressing and the addition of selected yeasts, ferments in stainless steel vats at a constant temperature of 15°. Once the fermentations are complete, the refinement continues on the yeasts for four months with continuous battonnage, refinement in glass follows.
