Production method: A part of the grapes, approximately 40%, are harvested in September and the must is kept cold. The remaining part of the grapes is harvested in the first ten days of October, after careful selection of the bunches, and macerated with the skins on the cold must. The grapes remain in maceration for 3-4 days. The practice takes up the production technique of the 1930s with a contemporary reinterpretation that allows for greater freshness to the wine.
Maturation of the wine: In cement tanks for 9 months
Refinement in the bottle: 6 months
