Grapes: 100% Grillo
Production Area: Central-Southern Sicily Agrigento – Caltanissetta, between the Valley of the Temples and the Nisseni Hills
Production System: Espalier, with a planting density of 4200 plants per hectare with a yield of 80 q, on varied, mostly clayey soil, rich in organic substances.
Vinification: Crushing, destemming and soft pressing followed by static settling of the must and of the skins, fermentation in stainless steel tanks, fermentation temperature 15° C.
Refinement: Permanence in stainless steel, refinement of three months in the bottle
Alcohol content: 12.50% vol.
Gastronomic matches: It goes well with raw fish, risottos or aged cheeses.
It is recommended to serve at a temperature of 8° C and to uncork one hour before consumption, to enhance the balanced minerality and freshness.
