Harvest
Manual harvesting of the grapes in the first ten days of October.

Vinification: the grapes are cold macerated for 12 hours and after a soft pressing, fermented at a controlled temperature of about 14-16°C.
Refinement: about 4 months in stainless steel tanks and a small percentage of Carricante ages for a few months in large acacia barrels (30 hl), before bottling.
Petralava Etna DOC white is a dry and mineral wine with hints of very intense vanilla and white pulp fruit in the first year of life.
The sense of smell is satisfied by the scent of broom and fruits – even exotic ones – which recall its pale straw yellow colour.
