Grapes: 100% Insolia
Production Area: Central-Southern Sicily Agrigento – Caltanissetta, between the Valley of the Temples and the Nisseni Hills
Production System: Espalier, with a planting density of 4200 plants per hectare with a yield of 80 q, on varied, mostly clayey soil, rich in organic substances.
Vinification: Crushing, destemming and soft pressing followed by settling at low temperature, fermentation in stainless steel tanks, fermentation temperature 15°C.
Refinement: Permanence in steel until mid-March, refinement of three months in the bottle
Alcohol content: 12.50% vol.
Gastronomic matches: It goes well with pasta salads and risottos or with sweet aged cheeses.
It is recommended to serve at a temperature of 8 °C and to uncork a few minutes before consumption, to enhance its freshness and aromas.
