Marine Colli Tortonesi Favorita DOC Magnum Vigne Marina Coppi

Production area: the grapes come from the "Gabetto" vineyard a few steps from the town of Castellania and from an old vineyard in the "Madonnina" area, near Carezzano.

Grapes: Favored in purity.

Harvest: the grapes are harvested by hand, in boxes, in the coolest hours of the morning to preserve their varietal aromas.

Winemaking techniques: soft pressing of the grapes whole and cold racking of the must; the alcoholic fermentation takes place slowly at a temperature of around 15°C. Once fermentation is complete, the wine is decanted and does not undergo malolactic fermentation.

Refinement: the wine matures for approximately 6 months on its noble lees, in steel tanks at a controlled temperature, and is enriched with aromas and structure thanks to manual batonnage. Bottled in July, it is further refined for a minimum period of 6 months.

Organoleptic characteristics:

View: deep straw yellow;
Smell: fine and intense, with great personality with clear hints of rennet apple, peach and wild herbs;
Taste: full, rounded and balanced, soft and with a great persistence on the olfactory taste.
Advice for optimal tasting: 12°C

Food pairings: risottos, first courses based on fish, shellfish, anchovies fried in Montebore, also excellent with stuffed vegetables, "vertis" omelettes, and goat's cheeses.
