COLLECTION PERIOD:
Chardonnay, Viognier, Sauvignon Blanc second half of August - Inzolia beginning of September
COLLECTION METHOD: Manually in 14 kg boxes
VINIFICATION:
A long maceration of the Viognier and Chardonnay grapes, followed by fermentation in steel together with Inzolia.
Sauvignon Blanc and part of the Chardonnay complete the fermentation in barriques, where they are aged for a further 12 months.
AGEING:
Sauvignon Blanc and part of the Chardonnay 12 months in oak barriques and steel with continuous batônnage; Inzolia, Viognier apart from the Chardonnay in steel. Final refinement in the bottle.

WORK IN THE CELLAR
This wine is the result of an oenological work in which the use of the barrique was intended as a tool to convey the typical expression of Sauvignon and Chardonnay towards notes of Mediterranean aromatic herbs thus enhancing the climatic influence of the cultivation environment, while the discrete notes of hydrocarbon and flint are the result of the plant-soil combination. The long maceration instead contributed to enriching the product with citrus-tropical notes perfectly balanced by a floral background, which leads to the definition of a new concept of aromatic longevity of Maria Costanza Bianco Riserva, elevating it to a wine of extraordinary complexity and durability over time.
SENSORY NOTES
Beautiful colour, bright straw yellow.
On the nose frank, rich and complex: evident notes of Mediterranean aromatic vegetable and yellow flowers, dandelion, chamomile and wild rocket.
The citrus-tropical notes and honey blend with barely hinted tertiary hints of hydrocarbons and well integrated with vanilla.
In the mouth it is warm, full and structured.
Opulent and rightly sapid for an uncommon persistence for a white wine.
