Vinification and Aging: The grapes are harvested in the 2nd decade of September.
The grapes are destemmed, pressed and left to macerate at a controlled temperature of 12-14°C,
in stainless steel tanks for 24-36 hours, where alcoholic fermentation begins.
Afterwards, the soft pressing of the crushed grapes takes place and the fermenting must is decanted into Allier oak barriques and tonneaux, 50% new and 50% 2nd and 3rd passage.
The fermentation temperature naturally stabilizes around 18°C;
followed by 11-month aging with bâtonnage performed every 10 days.
Description: Pure Insolia white wine with a deep but transparent light golden yellow colour,
one can sense the pleasant contrast of creaminess and crunchiness that will be waiting for us to taste.
It is in fact a soft white supported by a refreshing acid vein that accompanies the whole tasting.
With a complex, persistent nose, with hints of fruit, in particular ripe yellow peach and apricot,
still hints of eucalyptus, vanilla and acacia honey. Broad and persistent at the same time slightly tannic,
elegant and mineral.
