Fausto Colli Tortonesi Timorasso DOC Magnum Vigne Marina Coppi

Production area: the grapes come from the "Gabetto" and "Montagnina" vineyards, the latter planted in ritocchino with a slope of almost 35%. The pedological characteristics of this cru, rich in calcareous marl, give the wines elegance, flavor and structure.

Grapes: 100% Timorasso.

Harvest: paying particular attention to achieving of optimal ripeness, the grapes are harvested by hand, in boxes, in the coolest hours of the morning to preserve their varietal aromas.

Winemaking techniques: soft pressing of the whole grapes and cold racking of the must; the alcoholic fermentation takes place slowly at a temperature of around 15°C. Once fermentation is complete, the wine is decanted and does not undergo malolactic fermentation.

Refinement: the wine matures for approximately 10 months on its noble lees, in steel tanks at a controlled temperature, and is enriched with aromas and structure thanks to manual battonnage. Bottled in July, it is further refined for a minimum period of 10 months.

Organoleptic characteristics:
View: intense straw yellow, viscous and shiny.
Smell: complex and intense, it immediately highlights minerality and white flowers to end with citrus notes and pink grapefruit.
Taste: important structure, excellent flavor, warmth and freshness, elements that give great balance, persistent in the finish.

Food pairings: risottos creamed with cheese or white truffle, white meats, shellfish and structured fish dishes, excellent with cod.
