Vinification and Aging: the grapes are harvested in the 2nd week of September;
after destemming-crushing, the crushed grapes are cold-macerated for 10 - 12 hours at a temperature of 8-10°C.
The must obtained is cold decanted and after clarification it is fermented at a temperature of 12-14°C.
After fermentation, the wine remains on its lees, aging "sur-lie", until March (about 6 months).
Description: Insolia vinified alone with a lively golden yellow color and soft greenish reflections.
The nose offers a delicate bouquet with notes of white peach, exotic fruit, broom and orange blossom flowers,
embellished with mineral nuances. In the mouth it is fresh, fragrant and sapid.
How to serve it: The best serving temperature is around 11°C, serve in medium-sized goblets.
