ORGANOLEPTIC NOTES: a unique wine, the first Riesling on Etna and in Sicily. Pale color with green reflections, still young nose with all the typical precursors of the "kings' variety": white apple, plum, lemon, yellow flowers. On the palate it is perfectly dry, with not excessive acidity. The palate is perhaps its strong point in this youthful phase, with that "mineral" taste over which experts debate so much to be able to describe it.
PAIRING: its vibrant acidity and pronounced flavor goes well with all "pure" tastes: baked mackerel or steamed red snapper, dishes based on rice and vegetables, raw vegetables and, in ethnic cuisines, with sashimi or, changing continent, with the quesadilla.
