PRODUCTION AREA
Grapes from the most suitable vineyards in the heart of the classic area.
ALTITUDE AND EXPOSURE
Located between 100 and 200 meters above sea level. with south-east exposure.
SOIL CHARACTERISTICS
Of volcanic origin with basaltic formations, rich in iron and manganese oxides.
TRAINING SYSTEM
On the steep slopes furrowed by terraces with ancient dry stone walls, the vineyards are trained in the typical Veronese pergola system with a density of 3,000 vines/ha. HARVEST The harvest usually takes place between the first and second week of October.
VINIFICATION
The grapes, after soft pressing with intact bunches, are subjected to long cold skin maceration in the press. After static decantation, the must ferments at a controlled temperature (14-17°C) with selected yeasts in steel tanks.
FINING
The wine remains cold until spring in contact with its yeasts without carrying out malolactic fermentation.
ORGANOLEPTIC NOTES
Strong straw yellow colour; intense aroma, of particular finesse, with a fresh fragrance of elderflower and hints of exotic fruit and acacia honey. The flavor is savory, very gentle and harmonious, with great body and elegant persistence.
ALCAL GRADATION
Vol 13%.
Contains sulphites.
