Winemaking
The harvest takes place manually in small boxes.
After destemming and prolonged cold maceration on the skins, the soft and progressive pressing of the grapes is carried out.
A slow thermo-controlled alcoholic fermentation follows.
Aging
The wine ages on the noble lees for 2 months in steel tanks. Followed by passage in the autoclave for 30 days (short Charmat).

Ideal as an aperitif, superb with seafood and shellfish.
