27 Catarratto 75 cl Terre di Gratia
Cataratto is the most widespread variety in Sicily, traditionally cultivated in a wide shape, with the vines kept low and manual cultivation operations. The Catarratto grapes are harvested in boxes and vinified to preserve all the peculiarities of the wine: the light straw yellow colour, the fruity and floral notes and the good structure.
Harvest period: first ten days of September.
Winemaking system: cryomaceration for 5 hours followed by soft pressing. The vinification and refinement take place in stainless steel silos with the inoculation of selected indigenous Sicilian yeasts at a controlled temperature for 4 months.
