Organic Handmade Spaghettoni 500 gr Banfi
Of the 356 hectares of herbaceous crops, all organic, we note the cultivation of durum wheat Cappelli variety (started in 2016 with 10 hectares) and the spelled areas (50 hectares in total of Triticum monococcum and Triticum turgidum SSP dicoccum ). Four different shapes of Cappelli pasta (millille rigate, vitoni, spaghettoni and spaghetti) dried at a temperature below 38°C to keep the organoleptic characteristics of the raw material unaltered.
The entire production process of wheat pasta durum from organic farming in Banfi has a short supply chain: from the arable land in the lands of Montalcino, to the milling of the wheat at the Borgioli Mill in Calenzano up to the artisanal processing and packaging at the historic Pastificio Fabbri.
