Production area: C.da Santo Spirito, Passopisciaro, Etna.
Soil: volcanic sands; exclusive stones and rocks.
Grapes: 100% Nerello Mascalese.
Cultivation system: small tree supported by chestnut poles.
Plants up to 30 years old age.
Vinification: 8 hours of cold pre-fermentation maceration followed by fermentation in steel with indigenous yeasts.
Aging: 4 months in steel in contact with the fine lees and 2 months in the bottle.
