Winification: off-white, with a yield of no more than 50-55%. After pressing, the rosé must is sent towards primary fermentation, under strict thermodynamic control (from 13 to 15°C).
The transformation of the must into wine always continues in steel, on the fine lees, until the end of October.
Subsequently the wine is transferred to an autoclave for secondary fermentation, where secondary fermentation and subsequent refinement on the yeasts take place, for a total period of approximately 120 days.
Alcohol content: 12, 5% Vol
ORGANOLEPTIC CHARACTERISTICS
Colour: bright and intense rosé, characterized by fine and elegant perlage.
Aroma: good intensity on the nose, hints of small red fruits accompanied by floral notes of rose, bread crust and yeast.
Taste: thanks to the pleasant effervescence and excellent acidity, it is particularly fresh and lively in the mouth, rightly soft, balanced and fragrant.
Recommended pairings : perfect as an aperitif in lighter moments of conviviality, at the table it pairs very well with raw scampi and red prawns, amberjack carpaccio, tuna sashimi.
