VINEYARDS: Our vineyards are located on the steep slopes of the Sambuca area of Sicily, where they overlook Lake Arancio and find the best soil conditions to create a wonderful expression of a high quality grape rich in fruitiness and aromatic structure.
VINIFICATION: Maceration takes place at a controlled temperature. Pumping over is carried out every 4 hours, maceration continues for 10/12 days. The pressing is soft to avoid extracting green and bitter tannins. The wine is aged in stainless steel tanks.
SENSORY CHARACTERISTICS: Ruby red in colour, with purple reflections, transparent. Intense with hints of balsamic herbs, red fruit and floral notes. Warm, good persistence.
PAIRINGS: It pairs perfectly with first courses, pasta with meat sauce, aubergine caponata.
SERVING TEMPERATURE: 16-18°C;
