THE GRAPES
Corvina, Corvinone, Rondinella. PRODUCTION AREA The vineyards are mainly located in the Illasi valley
ALTITUDE AND EXPOSURE
The altitude varies between 150 and 300 m
SOIL CHARACTERISTICS
The soils are marl-limestone of alluvial origin, rich in skeleton.
BREEDING SYSTEM
Guyot. Production per hectare is strictly limited.
HARVEST
The bunches are collected by hand in boxes and immediately taken to the cellar, in the second week of October.
VINIFICATION
The fermentation takes place in truncated cone-shaped oak vats, at a temperature of 22-24° C, for a duration of at least one month.
The pumpovers are not scheduled and everything is managed manually and separately from vat to vat.
REFINEMENT
The refinement takes place in 500 liter oak, chestnut and cherry barrels, for a period of 18 months.
The wine matures for a further six months in the bottle before being sold.
