Grapes: 100% Merlot
Production Area: Central - Southern Sicily Agrigento – Caltanissetta, between the Valley of the Temples and the Nisseni Hills
Production System: Espalier, with a planting density of 4200 plants per hectare with a yield of 100 q, on varied soil mostly clayey-calcareous, rich in organic substances.
Vinification: Destemming and soft pressing followed by 10 - 15 days permanence on the skins, malolactic fermentation in stainless steel tanks, fermentation temperature of 28° C.
Aging: Permanence in steel until mid-March, three months refinement in bottle
Alcohol content: 13, 00 % vol.
Food pairings: Suitable to accompany red meat dishes, both roasts and brown sauces.
It is recommended to serve at a temperature of 18° C and to uncork one hour before consumption, to appreciate the extraordinary soft and spicy personality typical of Merlot.
