The grapes come from vineyards of around 15-30 years of age.
Harvested by hand, they are cooled in small boxes until the temperature reaches around 10° C. Once destemmed, the grapes ferment in open barriques in small batches of around 150 litres, whose fermentation temperature self-regulates between 18 and 24° thanks to the limited volume.
The wine then passes into barriques where malolactic fermentation takes place and is aged for at least 12 months and 6 more in the bottle.
Contains sulphites.
