Vinification: The harvest takes place manually in the coolest hours of the day. After destemming, the grapes are left to macerate at a controlled temperature. Then begins the alcoholic fermentation (18/25 days), which is followed by racking.
Refinement: The wine is initially aged in steel, followed by a passage in oak and cherry wood for about 6 months, to then be completed in the bottle
