THE GRAPES
Corvina, Rondinella, Corvinone.
PRODUCTION AREA
Particularly suitable vineyards selected on the hills between the Grezzana and Illasi valleys and partly in San Pietro in Cariano.
ALTITUDE AND EXPOSURE
The vineyards are located between 150 and 300 meters above sea level with main exposure to the south-west and a smaller part to the south-east.
SOIL CHARACTERISTICS
Marble-limestone, rich in skeleton.
TRAINING SYSTEM
Veronese pergola and espalier with Guyot method.
HARVEST
In mid-September, a few days before the start of the normal harvest, the rigorous sorting of the bunches takes place (25-30% of the total) which are hand-picked in plateaus and left to dry for over 3 months in dry and well-ventilated rooms; natural over-ripening and dehydration enriches the grapes in sugar concentration, polyphenolic and aromatic compounds.
VINIFICATION
The pressing operations began in the third week of December. Thanks to an initial cold maceration of one week and the long fermentation of 4 weeks with temperatures max of 20°C, the peculiarities of the grapes were enhanced, thus obtaining wines that are the most authentic and exclusive expression of the terroir of origin.
FINING
After fermentation the wine matures for 30 months in French oak barrels with an average capacity of 25 hl and in French oak tonneaux. Before marketing the wine ages in the bottle for 6 months.
ALCODATION
16% vol 

Contains sulphites.
