Sabuci Cerasuolo di Vittoria Classico DOCG 75 cl Az Agricola Cortese
The grapes are fermented separately: the Nero d'Avola in single open barriques with frequent punching down, the Frappato in 7 hl terracotta amphorae.
The natural porosity of the terracotta favors the ideal exchange of oxygen during fermentation. For this reason we keep the wine in contact with the skins for approximately 12 months.
The wines are then assembled and refined for six months in barriques and barrels of various sizes, at the end of which they rest in the bottle for at least another three months.
