WINE MAKING
The finest grapes are harvested manually and arranged in a single layer in small boxes of maximum 5 gk 1 each. The grapes are placed for 4 weeks in ventilated fruit cellars at a constant temperature. The natural enzymatic processes of the grapes thus allow the development of aromatic and gustatory peculiarities. The grapes must be treated with gloves so as not to compromise their delicate balance. The wine ages for 8-10 months in small wooden barrels with medium toasting. After about four months from being bottled it begins to best express its characteristics.
TASTING NOTES
The wine obtained from partial drying of the grapes is opulent, powerful, but finely balanced. The candied notes are wrapped around the toasted ones, giving the palate fullness and sensuality.
