VINEYARDS: Our vineyards are located on the steep slopes of the Sambuca di Sicilia area , where they overlook Lake Arancio and find the best soil conditions to create a wonderful expression of a high quality grape rich in fruitiness and aromatic structure.
VINIFICATION: The grapes are lightly pressed to avoid green tannins. Maceration takes place at a controlled temperature for approximately 10-12 days. The must is reassembled every 4 hours. The refinement takes place in stainless steel tanks.
SENSORY CHARACTERISTICS: With an intense ruby red color and an aroma rich in sensations of red fruit and spices with a pleasant balsamic note.
PAIRINGS: Excellent with large-scale dishes structure based on red meats, wild boar in Sicilian sauce with aromatic herbs, dish from the Sambuca di Sicilia area.
SERVING TEMPERATURE: 16-18°C.
