Pignolo DOC 75 cl Colutta
Intense aroma, full, dry flavour, with an important but pleasant tannin, it goes well with all red meats, mature cheeses and tasty cured meats. Serve at 20°C. We recommend opening the bottle at least an hour before serving.
Winemaking: the harvested and selected grapes are destemmed, pressed and left to ferment at a controlled temperature (around 28°C) with the addition of selected yeasts, sometimes in wooden vats. For color extraction, the "fulling" technique is used which allows the effective extraction of polyphenols, tannins and anthocyanins from the skins; this technique involves the sinking of the pomace "cap" allowing constant contact of the skins with the fermenting must which improves the stability of the color and structure of the wine over time.
