Belice Valley.
Surface soils of medium texture with a prevalent clay-limestone component,
good content of organic matter and iron.
TERRAIN: clayey silty
VINIFICATION
100% Nero d 'Avola harvested at phenolic maturity.
12-15 day maceration at 26 °C with daily pumping over.
After racking, it is aged in steel for about 4 months before being bottled.
It is not aged in wood to preserve the freshness of the aromas.
TASTING NOTES
Intense dark red color with violet reflections.
The nose has fruity notes ranging from licorice to wild berries.
On the palate it has a good body and round and sweet tannins.
Good persistence that tends to a fruity finish.
PAIRINGS
Perfect with pasta with pesto, grilled red meats and baked pecorino cheese.
Serve shortly after opening.
Serve at 14-16°C.
