AREA OF ORIGIN
Valle del Belice.
Surface soils of medium texture with a prevalent clay-limestone component,
good content of organic matter and iron.
VINIFICATION
Obtained from early harvested Nero d'Avola.
Cold maceration for 24 hours with 2 pumping over.
Fermentation at 12°C for 20 days to maintain the aromatic complex.
TASTING NOTES
Intense pink with a beautiful cherry red colour.
The bouquet is floral and fruity, with aromas of fresh herbs.
In the mouth it has a surprisingly present structure, with a good persistence and a pleasantly clean finish.
PAIRINGS
Pasta with pesto, grilled red meats, pecorino cheese, aged cheeses.
Serve at 10-12°C.
