Grapes: 100% Syrah
Production Area: Central-Southern Sicily Agrigento – Caltanissetta, between the Valley of the Temples and the Nisseni Hills
Production System: Espalier, with a planting density of 4200 plants per hectare with a yield of 110 q, on varied, mostly calcareous soil, rich in organic substances.
Vinification: Destemming and soft pressing followed by 10-15 days of permanence on the skins, malolactic fermentation in stainless steel tanks, fermentation temperature of 28°C.
Refinement: Permanence in steel until mid-March, refinement of three months in the bottle
Alcohol content: 13.00 % vol.
Gastronomic combinations: It goes well with Italian appetizers, pasta dishes and in general with the varied proposals of Mediterranean cuisine. It is recommended to serve at a temperature of 16°C and to uncork a few minutes before consumption, to enhance the freshness and the snappy juicy drink.
