Grapes: 100% Nero d'Avola
Production Area: Central-Southern Sicily Agrigento – Caltanissetta, between the Valley of the Temples and the Nisseni Hills
System Method of Production: Espalier, with a planting density of 4200 plants per hectare with a yield of 80 q, on varied soil, mostly calcareous, rich in organic substances.
Vinification: Destemming and soft pressing followed by 10 - 15 days of permanence on the skins, malolactic fermentation in stainless steel tanks, fermentation temperature of 28° C.
Duration of fermentation: about 10 days.
Refinement: Permanence in steel until mid-March, refinement for three months in the bottle
Alcohol content: 13.00% vol.
Food pairings: It goes well easily to numerous dishes of Sicilian cuisine, with semi-mature cheeses, it is recommended to serve at a temperature of 18° C. and to uncork an hour before consumption, to enhance the freshness, elegance and extractive richness.
