Merlot Le Merle 75 cl Les Cretes
Grape varieties: red, 100% Merlot.
Annual production: 4,000 bottles.
First year of production: 2015.
Winemaking: destemming of chilled grapes, whole berry fermentation for 12 days at a controlled temperature (25 °C), with daily pumping over. Aging for 18 months in 300L French oak barriques, 50% new and 50% second passage. Aged in the bottle for 12 months.
Sensory notes: brilliant, deep ruby. On the nose, notes of small red fruits, blueberry and blackberry jam accompany the floral notes of violet and rose. On the palate, the spicy nuances combine with hints of toasted cocoa, making the finish persuasive.
Serving temperature: 16/18 °C
Recommended pairings: donkey stew, Florentine steak, veal ossobuco, rack of lamb.
Contains sulphites.
