BOUQUET: It opens with hints of freshly cut grass and mountain essences. Fruity descriptors lead us to blackcurrant, mulberry and cherry. The olfactory sensations end with liquorice candy, nutmeg and a hint of pepper.
FLAVOUR: Mineral and savory. The tannic component is important in volume but elegant and soft in closing the taste sensations.
PAIRING: Red meats and game but also mature cheeses.
