Winemaking: destemming of the grapes, fermentation for 8/10 days in stainless steel at a controlled temperature (22°C), with daily pumping over. Aging for 12 months in used 300 L French oak. Bottle aging for 36 months.
Sensory notes: Impenetrable red. Nose of broad nuances, ripe fruit and withered flowers welcomed with spicy memories with a background of toasting and leather. Coherent palate, rigorous tannic texture contextualized with the profound softness of La Cor. Long, engaging finish with expert tension.
Pairings: Game, matured meats, Ivre de Fumin.
Serving temperature: 16/18 °C.
