CLONAL SELECTION A selection of particularly early strains that reach an extraordinary polyphenolic maturity capable of making it decidedly more stable over time. At the same time a delicate variety that fears excess sunlight and, precisely for this reason, experimentation has led to the development of a rigorous management protocol for the development of the plant and the foliage.
A beautiful red color intense purplish. On the nose hints of fresh fruit among which plum and blueberry stand out. On the finish, light notes of aromatic vegetables, cinchona, walnut husk and pepper. On the palate it is powerful, vigorous with a powdery tannin and of great length. It retains an acidic note which guarantees its persistence.
GRAPES: A particular company selection called V12, propagated starting from an ancient biotype of Perricone
TYPOLOGY OF THE SOIL: Fondirò alto, plateau of marl origin with a high clayey, highly calcareous component
TRAINING SYSTEM: Spurred cordon
COLLECTION PERIOD: Mid-October< br/>METHODS OF COLLECTION: Manually in 14 kg boxes
VINIFICATION: The grapes are delicately shelled and after a further manual selection they are transferred to vertical vinificators with mechanical punching down where, after a 30-day maceration completes the alcoholic fermentation. The malolactic fermentation is carried out in oak barriques
MATURATION: Partly in stainless steel and partly in new oak barriques, for about 36 months. Aging in the bottle for a minimum of 12 months
ALCOHOL: 14% vol
CULTIVATION ENVIRONMENT A spur of shameless limestone rock that emerges in the valley opposite the cellar, in the Fondirò district. A hillock with a considerable slope surrounded by the clayey soils of the valley floor which gives life to a truly particular soil. A special microclimate, where thanks to the slope we find greater protection from the sun's rays. The synergy between all these elements is what gives rise to the Cru Fondirò.
