THE GRAPES
Turbiana, better known as Trebbiano di Lugana.
PRODUCTION AREA
Municipality of Sirmione and Pozzolengo. The area characterized by the presence of the "morainic amphitheatre", where the wavy surface released derives from the retreat of the ancient glacier that had eroded the Alps and created Lake Garda.
ALTITUDE AND EXPOSURE
Vineyards with north-south exposure. The microclimate is always very favorable thanks to the lake which mitigates temperatures, allowing the grapes to always ripen and be healthy.
CHARACTERISTICS OF THE SOIL
Strongly clayey soil of a calcareous nature, very rich in mineral salts.
TRAINING SYSTEM
The most used training method is that of the double upside-down arch together with the Guyot.
HARVEST The grapes, well ripe, are harvested manually in the first ten days of October.
VINIFICATION The entire winemaking process takes place in "reducing" environments, i.e. with maximum protection against oxygen.
After soft pressing, the grapes enter the winemakers where they remain in cold pre-fermentation maceration, until the cap is raised, for approximately 48 hours.
After racking and soft pressing, the must is cold decanted and then carries out a slow fermentation with selected yeasts.
REFINING
the wine remains on its lees in steel until bottling.
GRADATION

13%vol 

Contains sulphites.
