Vinification and Ageing: After destemming, the grapes are left to macerate at a controlled temperature in stainless steel tanks
for about 10 days, undergoing repeated pumping over and delestage.
Once malolactic fermentation has taken place, 50% of the wine passes into second and third passage barriques for 12 months,
while the remainder continues to refine in tanks.
After bottling, the wine continues its refinement in the bottle for another 6 months before being put on the market.
