TYPE OF THE SOIL: Sandy soils of lava origin, with strong temperature variations between
day and night
CULTIVATION SYSTEM: Alberello Etna
PLANT DENSITY: 6,000 vines per hectare
AVERAGE AGE OF THE VINES: 100 years
YIELD PER HECTARE: 50 quintals
HARVEST PERIOD Mid-October, harvested by hand with the use of small crates
VINIFICATION: Manual selection of the bunches, maceration in contact with the skins for
18 days then soft pressing.
AGEING: from 12 to 18 months in oak barrels 25 hl oak; aging for at least 6 months
in the bottle
COLOUR Intense ruby red tending towards purple
BOUQUET Broad, ethereal with hints of red fruit and pleasant vanilla notes
FLAVOUR Decisive, warm, rightly tannic
PAIRINGS Savory meat main courses, Nebrodi black pork, game and mushrooms
