VINEYARDS: Our vineyards are located in the steep slopes of the Sambuca di Sicilia area, where they overlook Lake Arancio and find the best soil conditions to create a wonderful expression of a high quality grape rich in fruitiness and aromatic structure.
VINIFICATION: The destemmed grapes are cooled and the maceration continues for 10/12 days, once pressed they are placed in barriques. After 8 months in French oak barriques the wine is bottled and only after 6 months is it marketed.
SENSORY CHARACTERISTICS: Intense aroma of red fruits, herbaceous and balsamic notes. Good body, tannins in evidence. Return of red fruits with a warm finish.
PAIRINGS: It goes well with cured meats, sliced beef and pasta. Excellent with typical Sicilian and Mediterranean recipes.
SERVING TEMPERATURE: 16-18°C.
