Climate: mild winters, warm springs and autumns with little rain, very hot and dry summers.
Average age of the vineyards: 12 years.
Yield: 75 quintals of grapes per hectare.
Training system: spurred cordon counter-espalier.
Plant density: 4000 plants per hectare.
Vinification and ageing: the bunches are destemmed and sent in special tanks at a controlled temperature starting the fermentation with maceration of the skins. Pressing takes place to complete the alcoholic fermentation in a horizontal pneumatic press.
Long aging in stainless steel tanks and then in concrete tanks for 18 months, 3 months in bottle before marketing.
Alcohol: 13 ,0 % vol.
Organoleptic characteristics
Colour: intense ruby red.
Bouquet: the nose has distinct typical varietal notes of marasca cherry with herbaceous and spicy hints.
Taste: warm particularly velvety, with great structure and aromatic persistence. Good balance between tannins and softness.
Service temperature: 18°
Gastronomic combinations: ideal with cheeses and cured meats and first courses with meat sauces. Also excellent with white meats and fish.
Contains sulphites.
