THE GRAPES
Corvina, Corvinone, Rondinella.
PRODUCTION AREA
Selected vineyards in Cellore, in the municipality of Illasi, in the heart of the
Val d'Illasi (formerly called Valsecca, due to the scarcity of rain) and in
Valpantene in the municipality of Grezzana, loc. Cà da Lora.
ALTITUDE AND EXPOSURE
The vineyards are located between 300 and 350 meters above sea level with south-west exposure.
SOIL CHARACTERISTICS
Soils of marl-limestone origin, highly clayey, rich in limestone.
TRAINING SYSTEM
The vines, mostly from old plants, are trained using the Guyot system, with
a density of 4,000 vines/ha.
HARVEST
Starting from the end of September, all the grapes are rigorously inspected
but only the sparsest, ripest, healthiest bunches and with the best
exposure to the sun are collected in boxes of 5 kg and then stored in the rooms adjacent to the Illasi cellar. The natural drying enriches the
berries in sugar concentration, polyphenolic and aromatic compounds.
VINIFICATION
At the end of January, after pressing, a long and slow
alcoholic fermentation takes place which lasts over 50 days, at a maximum temperature of 20°C, with only indigenous yeasts, in wooden vats with an average capacity of 25hl.
FINING
The wine matures in tonneau for the first 12 months and subsequently in large
barrels, both made of French oak, for a total period of four years.
Before marketing the wine rests in the bottle for more than a
year for further important refinement.
