Bordenis Bardolino Classico DOC 75 cl Santi

Bordenis Bardolino Classico DOC 75 cl Santi

THE GRAPES
Corvina, Rondinella.
PRODUCTION AREA
The vineyard overlooks Lake Garda, in the municipality of Bardolino.
ALTITUDE AND EXPOSURE
Exposed to the south-east at 130 meters above sea level.
SOIL CHARACTERISTICS
The soil, eroded by the Wurmian glaciation, very thin but rich in calcium, with a hard and stony skeleton, allows a yield of only 80-100 quintals of grapes per hectare. This vineyard is considered by many to be an example of the most correct agronomic management in the classic Bardolino area and is used by local authorities as the best sample for monitoring pedoclimatic conditions and grape maturity.
TRAINING SYSTEM
Trained using the Guyot method, with a density of 5,000 vines/ha.
HARVEST
Manual harvesting takes place at the end of September.
VINIFICATION
The very ripe grapes are vinified with the whole bunch fermentation technique to obtain greater aromatic and gustatory intensity, with soft and round tannins. Maceration lasts approximately 15 days with different temperature management and pumping over depending on the various structural and aromatic components. Fermentation takes place at a controlled temperature (20-24°C), with selected yeasts and in modern winemakers to enhance the peculiarities of the grapes and vineyards of origin.
This whole bunch vinification increases the aromatic and gustatory intensity.
ORGANOLEPTIC NOTES
Ruby red colour; fresh and fragrant aroma, the strong notes of raspberry and morello cherry are complemented by floral and typically spicy hints of pepper; fruity and particularly savory flavour, delicate but with good body and excellent persistence.
