EXTRACTION SYSTEM: Preventive pitting of the fruit and extraction
(within 12 hours of collection) in a continuous cycle exclusively from the pulp alone;
Kneading in a controlled atmosphere, natural decantation and decanting.
FILTERING: Through natural cloths.
AROMA: Spicy and clear and persistent herbaceous.
TASTE: Fruity with marked creaminess, good balance with an aftertaste of green tomato and almond.
APPEARANCE: Highly creamy oil with a warm green color with golden yellow reflections.
USE: Finishing off large dishes. To use as a cream,
almost a vegetable “comic book” to enhance all dishes with a strong taste,
typical of haute cuisine.
