Lemon honey has particular characteristics of freshness, in addition to the aromas that recall citrus fruit and Sicily itself. Its sweet freshness is supported by ginger, which in our preparation we dose in order to obtain an unusually delicate presence. With conscious discretion, the ginger gives the juniper the complex role of support and contrast to the sweetness of the base. The green and balsamic aromas intertwine with the fresh and citrusy ones of the honey, enhancing it and building a linear but complex gustatory building, of workmanship and gustatory persistence similar to that of the more famous sweet wines. This honey offers numerous pairing possibilities, starting from the more natural ones, with bread and butter or with short and medium-aged cheeses. It lends itself to a fascinating play of alternations when paired with a well-made mortadella.
