Mandarin and turmeric jam 160 gr 33 30
The basis of this jam is the Ciaculli Mandarin, accepted by Slow Food among its Presi`di for its peculiarities. Intensely perfumed, it is treated by us safeguarding the essential oils which are first extracted with steam and then reinserted in the processing. A delicately dosed addition of turmeric completes the taste-olfactory range without becoming dominant. We obtain a product with a strong but not intrusive character, perfect to accompany cheeses to which the aging has given it spiciness. In particular, Ragusano caciocavallo in its more mature versions, but also pecorino cheese with a strong personality or Parmigiano Reggiano, if properly seasoned. The combination with white meats is very interesting, but also with pork, when used in recipes with more delicate flavours. Ingredients: tangerines, cane sugar, lemon juice, turmeric (0.1%). Fruit used: 85 g per 100 g.
