Instinctively, bergamot is associated with Calabria. And lavender in Provence. But this time instinct betrays: the bergamots we work with are Sicilian and have the peculiarity of containing fewer essential oils and being less bitter. Less suitable for the perfume industry, perfect for going to meet our equally Sicilian lavender. The union between the two ingredients is a jam with very intense aromas, which uses a powerful olfactory impact to start giving a pleasure that lasts on the palate. Its freshness alternates with a delicate bitter note, in a dynamic game that makes it the perfect companion to fish and shellfish, for example to give a boost and lightness to fresh grilled tuna, or grilled dolphinfish or other blue fish from the Mediterranean culinary tradition and not only. Even goat cheeses, in various stages of maturation, are a splendid base on which to play for stimulating combinations.
Ingredients: bergamots, cane sugar, lemon juice, lavender (0.1%). Fruit used: 45 g per 100 g
