Wild blackberry and liquorice extra jam 160 gr 33 30

The wild blackberries in this jam are spontaneous, laboriously harvested by hand at the highest altitudes of the volcano, in places far from traffic and human presence. They are processed in combination with the best Calabrian licorice root, of unquestionable quality. The licorice is carefully dosed, in order to grant it an important but not hegemonic presence. The queen remains the brunette, but she is a benevolent monarch who grants spaces which she herself benefits from. The intense taste of this product makes an excellent shoulder for cheeses with prolonged maturation, but it also manages to respect those with medium refinements. Its characteristics make it suitable for pairing with intensely flavored roasts, even better if with a smoky component which will be a reminder for licorice, whose flavor lingers long after passing. Used with roasted red meats, it ideally recalls the combination with a high-profile Nero d'Avola. Ingredients: wild blackberries, brown sugar, lemon juice, licorice powder (0.5%). Gelling agent: fruit pectin. Fruit used: 65 g per 100 g.
