A product of great personality, it combines the delicacy - appreciably tannic - of kaki with the spiciness of Martinique rum. The result is an astonishing gustatory experience, with a prelude that almost seems to introduce the spiciness and then drop the premise and open up to fruit and spices. A reminder for practically all cheeses, on which the slight tannic note acts to generate a dynamic and multidimensional passage on the taste buds, made up not only of flavours. A splendid brick on which to build a more evolved, more adult cheese cake. The persistence of the taste makes it an ideal pairing base for a passito from Zibibbo, in which the tannins are the common note that binds and alternates food and wine. Ingredients: persimmons, brown sugar, lemon juice, rum (1%), aromatic plants, spices. Gelling agent: fruit pectin. Fruit used: 70 g per 100 g.
